The Ultimate Low FODMAP Nachos



Indulge in these crowd pleasing nachos! Try serving these nachos up at your next Super Bowl Party, and I am sure they will disappear before kickoff.


These nachos are packed full of flavors that will have your mouth exploding with flavor. It is a perfect combination of crunch from the tortilla chips, spicy from the jalapeno and taco seasoning, and savory turkey and cheese. No one will even know that this recipe is Low FODMAP and gluten free.


Most Nacho dishes contain onion and garlic, which are two common triggers for people with IBS. So this recipe will help to satisfy that nacho craving! Despite omitting the aromas of onion and garlic, there are plenty of herbs and spices that can enhance the flavor of the dishes such as: cayenne pepper, paprika, cumin, and cilantro. You can make substitutes for onion by having the green parts only of green onion, or garlic infused olive oil to still have that savory flavor.


These nachos are easy and quick to make, that you can even use for a weeknight dinner meal.

 

THE ULTIMATE LOW FODMAP NACHOS RECIPE


Keep in mind, this recipe has not been tested to confirm that it is low FODMAP, but a single serving should be low FODMAP.

Total Time: 30 min

INGREDIENTS:

Taco Seasoning

(Will provide leftovers, for future taco recipes)

  • 1/2 Tbsp cayenne pepper

  • 1 Tbsp Paprika

  • 1 Tbsp Cumin

  • 1 Tbsp Oregano

  • 1 tsp Salt

  • 1/2 tsp black pepper


Nachos
  • 1 lbs 90% or leaner ground turkey

  • 1/4 cup water

  • 1 bag corn tortilla chips

  • 2-3 cup shredded cheddar cheese

  • 2 Tbsp green onion (green parts only)

  • 2 Tbsp garlic infused olive oil


Optional Toppings:

  • green onions(green tops only)

  • tomatoes

  • shredded lettuce

  • lactose free sour cream

  • canned sliced black olives


Salsa
  • 8 oz Grape tomatoes

  • 2 Tbsp Garlic infused olive oil

  • 1 lime juice

  • 1 jalapeno

  • 1 Tbsp green onion (green parts only)

  • 2 Tbsp cilantro

  • 1/4 tsp salt

  • 1/2 tsp black pepper



DIRECTIONS

  • Preheath the broiler on high.

  • Mix together taco seasoning ingredients together in one small bowl, and set to the side.

  • Heat garlic infused oil in skillet, saute green onion tops in skillet for 2-3 minutes.

  • Add ground turkey and stir meat until is cooked all the way through, and is dry and crumbly (8-10 minutes over medium high)

  • Add 2 Tbsp of the taco seasoning with 1/2 cup of water to turkey, and stir until mixed. let simmer for 2-5 minutes.

  • Take sheet pan and line with parchment paper.

  • Lay down layer of tortilla chips, layer of ground turkey mixture, then layer of cheese. Repeat the layer one more time.

  • Place sheet pan of nachos in oven. Leave in to broil for 3-4 minutes, or until cheese melts and slightly browned.

  • Top nachos with desired toppings: green onions (green part only), diced tomatoes, fresh salsa, canned black olives, jalapeños, and lactose free sour cream.

PREP THE SALSA::

  • Dice grape tomatoes and put into a bowl.

  • Dice jalapeño and add to tomatoes

  • Dice cilantro and add with tomato mixture.

  • Add garlic infused oil, the juice from 1 lime, salt and pepper.

  • Mix ingredients together and serve!
